Chicken Quesadilla Recipe

Y'all know I get down with mexican food!

Like Taco Tuesday is my jam!

We pretty much have tacos or taco salad every frikkin Tuesday...and I LOVE it!

We also like chicken quesadillas thrown into the weekly rotation and these are healthy and go right along with my 21 Day Fix meal plan that I follow.





Ingredients:

1 whole grain/whole wheat tortilla
3/4 cup shredded chicken
1-2 T cheddar cheese
Hot Sauce, to taste
1 T of plain greek yogurt for a topping {optional}

Directions:

1. Spray the pan with olive oil.
2. Add the chicken and cheese on the whole wheat tortilla.
3. Place tortilla on the skillet and fold in half. Flip to brown both sides.
4. Add a dollop of greek yogurt; add some salsa or hot sauce, too if you want!
