Beef Stir Fry {21 Day Fix Approved}

I wasn't blessed with my moms mad cooking skills haha so thank goodness she's in town for a couple weeks to help out with baby M and our dinners each night! She made this beef stir fry the other night and it was SOOO GOOD you guys! I may or may not have had 3 servings. ;) But it's all good because I'm nursing and I need the extra calories, right?!




Here's the recipe if you want to try it out!

For you 21 Day Fix people, here are your container amounts:

1 red (beef)
1 green (veggies)
1 yellow (brown rice)


Ingredients:

1/4 cup reduced-sodium soy sauce or liquid aminos (we used the liquid amino)
4 tbsp water
1 tbsp corn starch
1 tbsp raw honey
1 tbsp chili powder (optional--we used it)
1 tbsp mustard powder (optional--we used it)
1lb raw top sirloin beef, sliced
1 tsp coconut oil
1 bag of frozen broccoli or frozen peas and carrots (choose your veggie)
1 thin slice fresh ginger, peeled, finely chopped or 2 tbsp of ginger paste (we used ginger paste)

Directions:

1. Heat oil in large skillet over medium-high heat.

2. Add beef; cook, stirring frequently until cooked through and no longer pink.

3. Combine liquid aminos, 4 tbsp water, 1 tbsp corn starch, honey, chili powder, mustard powder and ginger paste in a small bowl. Stir. Set aside.

4. Add the frozen veggies to the beef. Cook about 5 minutes.

5. Add the sauce mixture to the skillet with the beef and veggies. Cook for about 2 more minutes.

6. Serve with a side of brown rice. Devour that sucker because it's SO GOOD! Enjoy! ;)
